Ingredients
- check_circle 2 wild-caught salmon fillets (6 oz each)
- check_circle 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
- check_circle 1 cup cooked quinoa
- check_circle 2 tbsp olive oil
- check_circle 2 tbsp honey
- check_circle 1 lemon (juice and zest)
- check_circle 2 cloves garlic, minced
- check_circle 1 tsp dried oregano
- check_circle Salt and pepper to taste
- check_circle Fresh parsley for garnish
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, mix honey, lemon juice, lemon zest, garlic, and oregano to make the glaze.

Place salmon fillets on the baking sheet and brush generously with half of the glaze.

Toss vegetables with olive oil, salt, and pepper, then arrange around the salmon.

Roast for 15-18 minutes until salmon is cooked through and vegetables are tender.

Brush salmon with remaining glaze during the last 5 minutes of cooking.

Serve salmon and vegetables over cooked quinoa, garnished with fresh parsley.
